This recipe will only take you 5 minutes of prep time and then once its set it is the perfect way to start your day! It’s sweet, delicious and best of all, super hydrating so you will be able to go out and seize your summer day sufficiently hydrated!

You will need:

  • 3/4 cup of Peach, diced into small pieces
  • 1/4 cup of Strawberries, hulled and diced into small pieces
  • 1 Tbsp of Chia Seeds
  • 1 Tbsp of Lemon Juice

Instructions:

  1. Blend the fruit until smooth in a blender.
  2. Pour the fruit into a small airtight container. Add in the chia seeds and lemon juice.
  3. Stir to combine.
  4. Seal the container and set in the fridge for at least 30 minutes.
  5. Remove from the fridge and enjoy on toast, in a parfait, on waffles or pancakes!
  1. Vegan Mango-Coconut Green Smoothie

This 1 step recipe for a tasty smoothie is a great and easy way to kick off your day. With a light, dairy free coconut milk base this vegan green smoothie is utterly creamy and delightfully coconutty. Mango gives it a tropical feel that is the best way to set the tone for a summer day straight away as it reminds you of a day at the beach with a refreshing exotic drink in hand.

You will need:

  • 1 cup of fresh washed spinach leaves
  • 1 cup of fresh or frozen mango cubes
  • 1/2 medium banana
  • 3/4 cup of light coconut milk
  • 1/2 cup of orange juice
  • 1/2 cup of ice cubes

Instructions

Place all ingredients in a blender and puree until smooth. Pour into glasses and serve with a straw. Enjoy!

  1. Thai Cucumber Salad with Roasted Spiced Chickpeas

You will need:

a. Dressing:

  • 1/2 cup of seasoned rice vinegar
  • 1.5 TBSP sugar
  • 1/2 TSP salt

b. Salad:

  • 2 medium cucumbers
  • 1 red pepper, diced
  • 1 cup of diced red onion
  • 1/4 cup of roughly chopped cilantro
  • 1/4 cup of chopped roasted peanuts, for garnish

Instructions:

  1. Whisk dressing ingredients together in a small bowl and set aside.
  2. Peel the cucumbers, slice off the ends, and slice in half lengthwise. Scoop out the seeds with a small spoon. Slice halves in smaller pieces and toss into a large bowl.
  3. Dice the red pepper and red onion and add into bowl. Roughly chop the cilantro and add into bowl. Pour in all the dressing and toss to combine. Let this salad sit for about 30 minutes in the fridge, tossing every 10 minutes or so to help the dressing soak in.
  4. Meanwhile, prepare the roasted chickpeas. Drain the can of chickpeas and dry them with kitchen roll. Place them on a baking tray and drizzle with olive oil. Add ½ tsp of paprika, ½ tsp of cumin, ½ tsp of turmeric and a sprinkle of salt. Roast the chickpeas for 40 minutes, (give the tray a shake after 20 minutes) and return it to the oven.
  5. Portion into bowls and top with peanuts and roasted chickpeas.
  1. Tasty Tomato and Cucumber Gazpacho

This is the perfect soup for a hot summer day. It’s really refreshing and delicious as well as super easy to make!

You will need:

  • 2 cups (500 mL) tomato juice
  • 1 1/2 pounds tomatoes, cored and roughly chopped
  • 1 large red pepper, de-seeded and roughly chopped
  • 1 large cucumber, peeled and roughly chopped
  • 1/4 cup chopped sweet onion
  • 1 large garlic clove
  • 1 TBSP fresh lime juice
  • 2 TBSP chopped fresh parsley
  • Salt to taste
  • 1/2 TSP red pepper flakes
  • 1/2 TSP freshly ground black pepper
  • 1 1/2–3 TBSP red wine vinegar
  • Olive oil and croutons for serving

Instructions:

  1. Combine the tomato juice, tomatoes, red pepper, cucumber, onion, garlic, lime juice, and parsley in a blender and blend until smooth.
  2. Add in the rest of the seasoning’s (salt, red pepper flakes, pepper, and vinegar) to taste, and blend again.
  3. Pour into a 2-litre glass jar and secure lid. Chill for 3 to 4 hours, or overnight.
  4. Before serving, shake the jar to combine.
  5. Pour into bowls, and garnish with olive oil and croutons.

Home-made Raspberry Popsicles

You will need:

  • 12 ounces of small berries such as blueberries and raspberries
  • 2 TSP of sugar
  • Sprinkle of sea salt
  • 2 TBSP + ¼ cup of honey
  • 2 cups of whole Greek yogurt
  • ½ small lemon, juiced

Instructions:

  1. In a medium bowl, gently toss berries with the sugar, a dash of sea salt and 2 tablespoons honey.
  2. Pour the berries onto a baking sheet and arrange the berries in a single layer. Roast for 30 minutes at 350 degrees, stirring halfway, or long enough for the berry juices to thicken but not burn.
  3. While the fruit is roasting, blend together the Greek yogurt and lemon juice in a medium bowl.
  4. Mix in honey to taste, until it is barely sweet enough for your liking (keep in mind that the berries will be very sweet).
  5. Let the berries cool for at least ten minutes, then scrape the berries and all of their juices into the bowl of yogurt.
  6. Use a big spoon to gently fold the mixture together.
  7. Use the spoon to transfer the yogurt blend into the popsicle mould and insert popsicle sticks.
  8. Freeze for at least four hours.
  9. When you’re ready to pop out the popsicles, run warm water around the outsides of the moulds for about ten seconds and gently remove the popsicles. Enjoy the quickly before they melt!!
