As Covid-19 continues to keep many of us house bound and with bored children under foot, it is important to keep stay healthy as well as keep boredom at bay.
Follow these simple and fun recipes that will not only keep your family entertained and allow for family bonding time but will be healthy while eating tasty treats to boot!
These water-based, healthy and summery drinks will not only keep you and the kids hydrated but are perfect for a summers day BBQ or a breakfast treat.
All you need is: 250ml of water, 200g granulated sugar, 5 ripe peaches, 4 stoned and chopped, 1 sliced to serve and 4 teabags.
Step 1: Tip the sugar into a pan with 250ml water. Bring to the boil slowly and make sure all of the sugar fully dissolves. Add the chopped peaches and cook them until the peaches go soft. Take the pan off the heat and mash the peaches with a fork. Then leave the mixture to infuse for 1 hr.
Step 2: Sieve the resulting syrup into a jug, mashing the fruit further to release all the juice.
Step 3: Put the teabags in a large heatproof jug and add 2 litres boiling water. Allow the tea to brew for 4 mins, then remove the teabags. Leave the tea to cool, then transfer to the fridge until chilled.
Step 4: Stir your peach syrup into the iced tea with some ice. Top up the mixture with more water.
And there you have it, the perfect Peach Iced Tea!
You will need: 3 lemons chopped roughly, 140g of caster sugar and 1l of cold water!
Step 1: Tip the lemons, sugar and half a litre of water into a food processor. Blend until the lemon is finely chopped.
Step 2: Pour the mixture into a sieve over a bowl. Press through as much juice as you can. Top up the final mixture with the other half a litre of water. Serve your lemonade to your family with ice and a slice of lemon or lime! This recipe is sure to complete your family BBQ!
It’s just so simple! Toss 2 cups of kale, a dash of fresh ginger, 3 peeled and segmented oranges, 1 chopped lemon, 1 peeled and chopped banana and 1 chopped peach, plus 2 cups of water into a blender! Blend until smooth and then serve with some ice cubes. Drink up, you have started your day the right way!
During the summer there is nothing more satisfying an ice lolly! These homemade, healthy recipes for ice lollies for children and adults are so easy to make with the primary, accessible ingredient – water, they are sure to keep you healthy and happy during Covid-19 and into the summer months.
You will need: 5 large carrots, juice of 3 large oranges, 1 cup of water.
Step 1: Finely grate the carrots onto the middle of a clean tea towel. Wrap up the carrots in the tea towel and squeeze the carrot juice into a jug. Discarding the carrot pulp. Add orange juice and top up with some cold water in order to make up 360ml liquid. Pour the liquid into your lolly moulds and freeze overnight.
Step 2: Crack the lollies out of the freezer and let your kids enjoy a cool yet nutritious treat!
Gather these ingredients: 6 slices of cucumber, 6 mint leaves, 75ml gin, 150ml of tonic, 100ml of water and 50g caster sugar. 250ml of your Alternatively to tonic, water and sugar, you could use your home made lemonade – see recipe above!
Step 1: Push a cucumber slice and a mint leaf into each lolly mould.
Step 2:, Stir the gin, tonic and sugar together in a jug until the sugar dissolves and the tonic loses its fizz. Divide the mixture between the moulds, push in the lolly sticks and freeze for at least 4 hrs. If you made them as soon as you finish work they’ll be a perfect as a after dinner desert!
Dairy, though delicious is not the healthiest thing we can be putting into our bodies. But this does not mean that we have to sacrifice flavoursome food. In fact, here is a prime example of a delectable dairy free desert that everyone can enjoy! Try your hand at some baking during your extra free time at home, get the family involved and have yourself a family bake off!
To create this dairy free masterpiece you will need: 250 g of plain flour, 3 tsp baking powder, 150 g of granulated sugar, 250 ml of water, 55 ml vegetable oil, 1 tsp vanilla extract and icing sugar.
Step1: In the large bowl of an electric mixer, sift together the flour and baking powder.
Step 2: In a separate bowl melt the sugar in the water by stirring well. Then add the vegetable oil and pour into the mixer with the flour.
Step 3: Add vanilla extract and whisk until the batter is smooth.
Step 4: Grease your tin with butter and pour the cake batter in it.
Step 5: Bake the cake for around 30 minutes at 160°C . To check if it’s done, s stick a knife into the middle, if the knife comes out wet it is not ready yet. If it comes out dry, take the cake out of the oven!
Step 6: Let the cake cool, then dust the top with icing sugar, serve and enjoy your guilt free, dairy free cake!
